Tonight on my drive home from work I had a brilliant idea - homemade tortilla chips and salsa. I knew I had some wholemeal tortillas in the fridge but wasn’t quite sure how I would procure the salsa as I knew I didn’t have any tomatoes. But I did have capsicum! So when I got home I googled capsicum salsa and was able to come up with something. For the salsa I roasted some capsicums and removed the skins and chopped. Added them to some onion and jalepenos. Then made a mixture of lime juice, salt, pepper, cumin and vegetable oil and added it to the onion and capsicum. Done. For the chips I sliced the tortillas into triangles, brushed with olive oil and sprinkled with salt and paprika before baking until gold and crispy! So easy and delicious. This actually ended up being my dinner!
